Picked green.Early-harvest pistachio
Raw kernels with a purple skin and vivid green flesh: the grade baklava and pastry makers ask for. From Şanlıurfa, Türkiye, for buyers in Europe and the Gulf.

Green, because it is picked early.
A pistachio kernel loses its green as it ripens. Boz iç is harvested in August, three to four weeks ahead of the main crop, so the colour stays in the kernel and shows in the finished baklava.
